Quote of the week...


    Hello ladies and gents!  Hope yall are all having a wonderful Wednesday.  I saw this quote on twitter this morning and I thought it was perfect for what I'm feeling.  This past week, one of my closest friends lost her dear and precious Momma.  She had been battling cancer for a long, long time now and her fight finally came to an end.  My emotions couldn't help but to go back to the night when my Daddy past away...what all I went through...how it was such a blur...how I had to put on a "tough" face for everyone when really, all I wanted to do was weep.  

    This quote really is true.  Things happen in our lives sometimes that we just don't understand.  You just have to know that God is in control...he will never, ever, ever put you in a situation that you can't handle...wheather it's with work, family, school, relationships, or a loss of a family member.  Keep your head up and know that everything happens for a reason...even if you don't understand and it hurts your heart so badly that you can't stand it...just know that God is in control.

    Have anyone of you been in a situation where you remember being tough to get through?

My 1st Nashville Steeplechase!!!

    Cold, wet & rainy would be 3 words that described the weather this past Saturday for my 1st Steeplechase.  That didn't get in the way of us having a good time though.  Here are some of my favorite pictures throughout the day.

Happy 100th blog post to me!



    Happy 100th blog post to me!  I’m so excited about this little milestone! I never thought when I started this blog that I had much to offer compared to the thousands of other “southern” bloggers out there, but I was having a lot of fun anyway.

    And now, 7 months later, you’re still coming back, so I want to thank you.  Thank you for taking the time out of your day to visit my Blog.  I know that many of you have very busy lives, so I will do my best to keep things interesting and entertaining.  Thanks again!

AUUUH-MAZING!!!!!!

    So I just discovered the most amazing invention EVER!  FLOATING BEER PONG TABLE!!!!  They even make them in pink...this is so exciting.  I think I know what will be everyone's Christmas present this year...why can't Christmas be in the summer???

Friendships

    One of my close friends from college emailed this to me today and it really got me thinking.  Do you have anyone in your life that you used to be really close with and now that you’ve grown up and have “big girl” jobs and responsibilities, you just have lost touch?  Well, this is kind of what happened between me and my friend and after reading this poem, I immediately made plans for us to have a phone date to catch up this Sunday.


    I encourage you to read this and remember to always say what you mean.  If you love someone, tell them.

Crustless Spinach, Onion & Feta Quiche


    What a tasty and delicious breakfast treat.  My friend Allison gave me this recipe and I made it last night so I could have it for breakfast this week and it was sooooo yummy!!!  Here's the recipe:

    Crustless Spinach, Onion and Feta Quiche

    Technically crustless but the addition of flour makes for a delicious crusty bottom and sides to this quiche.

    Ingredients

      1 medium onion, diced 6-oz fresh baby spinach 2 large eggs 1/2 cup egg beaters (liquid substitute) 1/2 cup all purpose flour 1/2 tsp baking powder 1/4 tsp salt pinch cayenne pepper 1 1/3 cups non fat milk 1/2 cup feta cheese

    Directions

    Preheat oven to 400F.
    Lightly grease a 10-inch quiche/tart pan (or a pie plate)
    In a medium frying pan, cook diced onion with a bit of vegetable oil (or cooking spray) over medium-high heat until translucent and tender. Add in fresh spinach and cook until just wilted. Set aside to cool for a few minutes
    In a large mixing bowl, whisk together eggs, flour, baking powder and salt. Whisk in milk, then stir in spinach-onion mixture.
    Pour quiche base into prepared pan. Top with feta cheese.
    Bake for 25 minutes, or until center is set and the outside edge is golden brown.
    Let set for 5 minutes, then slice and serve.

    Do yall have any good quiche recipes???  I thought a/b this after I made it...but how cute would it be to bake it in the Sunbeam cupcake maker???  It would be the perfect serving size and you could add fruit to go with it as well.  Thoughts???

    The American Idol LIVE TOUR 2011!!!!!!


    This is the very 1st time I've watched the entire season of American Idol the whole way through.  Garrett has been keeping up with it as well so as a "Congrats for getting into LAW SCHOOL" gift, I got us these tickets.  They come to Nashville July 30th and I couldn't be more excited.

    American Idol returns for another summer this season, showcasing performances by this season's top 11. The singers in the tour include Casey Abrams, Haley Reinhart, Jacob Lusk, James Durbin, Lauren Alaina, Naima Adedapo, Paul McDonald, Pia Toscano, Scotty McCreery, Stefano Langone, and Thia Megia. The tour commences in West Valley City, UT at the Maverik Center on Wednesday July 6th and wraps up Saturday September 10th in Rochester, NY at the Blue Cross Arena. Tickets will be available for purchase Friday, May 13th. You can find tickets and the tour dates here.

Quote of the week...


    Hello guys and gals!  I hope yall had a great weekend.  This is currently my desktop wallpaper.  Garrett's dad took us for a drive yesterday to some parts in Alabama that got hit by the tornado so this quote really stuck out to me today.  I had never seen damages caused by tornado's before and it really took my breath away.  I can't possibly imagine what some of those people are going through to have everything completely taken away from them.  My heart just goes out to each and every one of those people affected by the tornado's.  I hope you all have a great week and encourage you to help someone if you can.  It's the little things in life that mean the most sometimes.

Mother’s Day & Weekend Craft


    I usually don’t get a chance to blog over the weekend, but I can’t go without saying something about my precious Momma.  She is one of the most amazing women I know and I'm not sure where I would be without her.  She really is the best, and now that I'm older, I appreciate her so much more. Whenever I need a pick me up or need to talk to a familiar voice, I call her. There's nothing that she wouldn't do for me and my brother and Mother's day is the best way to let her know how loved she really is.  So here's to my Momma!!!  I love you so very, very much.  Hope you had a fantastic Mother’s Day.


    Now…on to my weekend craft.  One of Garrett’s friends, Ramzi, asked me to help paint a cornhole set for him for Steeplechase this weekend.  Here are a few pictures. 


    One is a TN Vols and the other is a MTSU (Middle Tennessee State University) one.  This really makes me excited for this weekend…I absolutely LOVE horse races.  I’m from South Carolina and I’ve grown up going to the Carolina Cup.  I haven’t been able to go in the past 2 years so I’m really looking forward to Steeplechase.  Ahh, I can’t wait to get all dressed up with my sundress and big, cute hat!

Mexican & Margaritas, yes please!


    Did anyone celebrate Cinco de Mayo yesterday???  I know I did.  I actually had Mexican twice yesterday….once with co-workers for lunch and then me and the roomies went out last night to La Hacienda.  So yea, I definitely need to work out today…maybe do a double workout.  Anywho, I hope everyone enjoyed themselves and ate way to many chips and salsa, and one, two or more margaritas!!!   Here are some pictures from last night.

“too cute to be true”

    One of my closest friends is getting married at the end of the month so I went online to browse their registry to see what I wanted to pick out for them.  Of course I wanted to get them something cute….and boy did I….just look at what I found.  My mouth seriously dropped when I saw this and I was full of excitement.  I mean, who wouldn’t absolutely love this thing?  Especially if you like to bake.
    This “too cute to be true” cupcake maker bakes 6 cupcakes in 10 minutes!  This tiny oven is available in pastel pink or blue.  Is this the perfect gift for that cupcake lover who has everything?  ABSOLTUELY!!!!!!
    Have any of you seen/used this yet???  I seriously think I'm going to purchase one for myself.
