My 4th of July Cake Balls

    I hope you all had a lovely 4th of July.  I'll do a post later on a re-cap of my weekend.
     I'd have to say that these turned out pretty good for it being my 1st time making them.  It was extremely easy, but VERY time consuming.  

    Here's how I did it:
     
    What I used:
    - Chocolate cake mix
    - Red Velvet cake mix 
    - 2 Cream Cheese Frostings
    - Waxed Paper
    - Candy Melts
    -Toothpicks

    Directions:
    1) Bake cake as directed.
    2) Let the cake COOL for at least a half hour! Don't mix in the frosting while HOT! You will get a gooey, yummy, mess! Trim off the edges of the cake to make it easier to crumble.
    3) I put the icing in the microwave for 25 seconds, (just long enough to soften it and not make it runny) to make it easier to stir in. I used a handmixer to mix the cake and frosting. I used about ¾ of my container of frosting.
    4) Put this mixture in the refrigerator, covered, for at least 3 hours....I actually did mine overnight and it was perfect. 
    5) Using your hands, roll the balls bite size and put them on waxed paper.
    6) Stick the balls in the freezer for an hour or more. You definitely have to keep the dough cold, so you have to put them in and out of the freezer as you work with them. 
    7) Melt up candy melts you prefer.  Melt candy melts in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
    8) Using a toothpick, pick up the balls and dip in the candy melts. Using a second toothpick in the other hand help the ball slid off the toothpick. NOTE: If your balls fall off the toothpick into the chocolate they are not frozen enough. I also found that sometimes a second dip in chocolate smoothes out some of the imperfections from the first dip.9) Place in refrigerator to set.
    10) Take them out and make the American Flag...and TA DAA!!!!  You're ready to celebrate with fun and festive cake balls!  GO AMERICA!
